Ingredients
Pumpkin – 450-550 g
or pumpkin puree – 215-220 g
Flour – 250 g
Eggs – 2 pcs.
Sugar – 200 g
Refined sunflower oil – 125 ml
Candied fruits – 50 g
Raisins – 50 g
Dried apricots – 50 g
Baking powder – 1 teaspoon
Ground cinnamon – 0.5 teaspoon
Ground cloves – 1 pinch
Vanillin – 1 pinch
Salt – 1 pinch
Butter – for greasing the mold
Powdered sugar – for decoration
Instructions
Peel the pumpkin from seeds. Cut the pumpkin into small pieces.
Place the pumpkin on a baking sheet lined with parchment. Bake the pumpkin in the oven at 180 degrees for 20-30 minutes.
The readiness of the pumpkin can be checked with a knife – if the knife freely enters the pulp, then the pumpkin is ready. Remove the baked pumpkin from the oven, set aside until it cools completely.
While the pumpkin is cooling, you need to beat the eggs with sugar.
Pour sunflower oil over the beaten eggs. Continue whisking.
When the baked pumpkin has cooled, peel it. Send the peeled pumpkin to the blender bowl.
Use a hand blender to puree the pumpkin.
Add pumpkin puree to the egg mass. Stir at low mixer speed.
Mix flour with baking powder. Sift half the flour into the dough.
Add salt, vanillin, cinnamon and cloves.
Mix well all combined ingredients with a mixer at low speed. Then add the remaining flour with baking powder into the dough. The finished dough should fall freely from the shoulder blade.
Lastly, add candied fruits, raisins, and finely chopped dried apricots to the dough. Use a spatula to mix the dough with dried fruits and dried apricots.
Preheat the oven to 180 grams. Grease a baking dish with butter. Pour the dough into a greased pan. Bake the pumpkin cake for about 40 minutes at 180 degrees.
Sprinkle the finished pumpkin cake with icing sugar.
