Pumpkin Muffins with Lemon Icing

Pumpkin muffins recipe with lemon frosting. Pumpkin puree gives baked goods a bright orange color and delicate texture. The muffins are very beautiful, soft, with a pleasant aroma of vanilla, lemon and saffron.

Ingredients

  • Flour – 1-1.5 cups
  • White sugar – 50 g
  • Brown sugar – 50 g
  • Vegetable oil (odorless) – 80 ml
  • Egg – 1 pc.
  • Pumpkin – 300 g
  • Baking powder – 1 teaspoon.
  • Lemon – 1 pc.
  • Vanilla sugar – 1 teaspoon
  • Imeretian saffron – 1 teaspoon
  • Salt – 1 pinch

  • For glaze:
  • Powdered sugar – 150 g
  • Lemon juice – 2 tbsp

Directions

  1. Peel the pumpkin, cut into small pieces, put in a glass bowl.
  2. Microwave the pumpkin at full power for 6-8 minutes, stirring the pumpkin every 2 minutes.
  3. The pumpkin pieces should be soft and easy to pierce with a fork. If liquid is formed when baking the pumpkin, drain it.
  4. Puree the baked pumpkin with a blender. You should get 200 ml of thick pumpkin puree.
  5. Pour saffron with 2 teaspoons of boiling water and leave for 10 minutes. Remove the zest from the lemon with a fine grater.
  6. Add lemon zest and saffron liquid (through a sieve) to the pumpkin puree. Stir and cool.
  7. Break an egg into a bowl, add white and brown sugar, salt and vanilla sugar.
  8. Beat the egg with sugar into a fluffy mass, add vegetable oil and beat again.
  9. Add pumpkin puree, stir.
  10. Gradually add flour mixed with baking powder to the dough.
  11. You may need more or less flour, depending on how thick the pumpkin puree is.
  12. Substitute lump-free thick dough.
  13. Divide the dough into baking tins, filling them 2/3 of the volume.
  14. Bake the pumpkin muffins in an oven preheated to 180 degrees for 25 minutes.
  15. Put the finished muffins on the wire rack and cool.
  16. Ingredients for making lemon glaze.
  17. To prepare the lemon glaze, gradually pour the lemon juice into the icing sugar and stir immediately. If the icing is thin, add more powdered sugar.
  18. Apply lemon frosting to pumpkin muffins.
  19. Pumpkin muffins with lemon icing are ready. Bon Appetit.
