Ingredients

  • pumpkin pulp – 400 g
  • eggs – 2 pcs.
  • flour – 5 tbsp
  • salt – on the tip of a knife
  • vanilla sugar – 1 teaspoon
  • ground nutmeg – 1/3 teaspoon.
  • vegetable oil for frying – to taste

Directions

  1. Prepare the quick pancake dough. Wash the pumpkin pulp and grate on a coarse or medium grater. Let it sit for 10 minutes, then squeeze it out gently to get rid of excess liquid.
  2. Transfer the grated pumpkin to a large bowl. Whisk the eggs lightly. Add to the grated pumpkin in a bowl.
  3. Add flour, salt, vanilla sugar, and a pinch of nutmeg. Mix all ingredients thoroughly.
  4. Heat a small amount of oil in a large skillet. Spoon the resulting pancake dough in portions and fry over medium heat until browned.
  5. Turn the pancakes over and fry on the other side.
