Pumpkin Salad

An excellent sweet salad of pumpkin, apples, and carrots, perfect for a light breakfast or dinner.

Ingredients

  • Pumpkin – 600 g
  • Apples – 4-5 pcs.
  • Lemon – 1 pc.
  • Honey – 3-4 tablespoons
  • Ground walnuts – 3 tablespoon
  • Carrots – 1-2 pcs.
  • Greens (optional) – to taste

Direction

  1. Peel the walnuts. Peel and wash pumpkins and carrots. Cut the carrots into strips. And grate the pumpkin on a coarse grater.
  2. Squeeze the lemon juice into a separate container.
  3. Cut the zest from the lemon and chop it into strips. Peel the apples and cut them into strips.
  4. Prepare a pumpkin salad dressing. Add lemon juice to honey and mix well.
  5. Crush the nuts with a rocking chair on a cutting board.
  6. Put pumpkin, apples, and carrots in a bowl. Add lemon zest, lemon juice with honey and mix well. Place the salad in a salad bowl. Decorate the pumpkin salad with herbs and walnuts.
