Quiche with Zucchini, Green Onions and Mint

The savory pastry loved by many is embodied in this cake. Here is a combination of zucchini with mint and onions in an egg filling on a delicious dough – what a picnic snack!

Servings: 6

Ingredients

  • shortcrust pastry or puff pastry 400 g
  • small zucchini 1 pc.
  • mint 1 bunch
  • green onion 1 bunch
  • egg 2 pcs.
  • milk 80 ml
  • flour 2 tablespoon.
  • oil for frying 1 tablespoon.
  • salt, pepper to taste

Directions

  1. We take out the dough from the refrigerator, let it rest for 30 minutes. Then we roll it out and put it in a round shape.
  2. Fry finely chopped onion and zucchini for the filling. Rub the zucchini on a coarse grater, finely chop the onion and lightly fry.
  3. Put the filling on the dough, sprinkle with mint, pour the milk-egg mixture, bake until tender. Put the fried zucchini and onions on the dough, sprinkle with chopped mint (you can dry it), and fill it with a mixture of beaten eggs, flour, and milk. We send the form to the oven, heated to 200 * C for 25-30 minutes.
  4. Quiche with courgettes, green onions, and mint is ready to serve. We take the finished quiche out of the oven and leave it in the form for 10 minutes. We take out the slightly cooled cake from the mold, cut it and enjoy a delicious and satisfying dish!
