Fried thin Bread with Mint and Green Onions

Unlike ordinary bread, it is much more interesting to serve such aromatic, crunchy, long, and thin cakes to the table. The dough is very easy to make. True, it contains not only standard flour and water, but also halloumi cheese, known from Cypriot cuisine – a white, salty “relative” of feta cheese.

Servings: 8

Ingredients

  • Flour with baking powder – 2 cups
  • Olive oil – 2 tbsp
  • Halloumi cheese, hard, grated – 2 cups
  • Boiling water – 1 glass
  • Mint leaves – 1 cup
  • Sea salt
  • For the green onion pesto sauce:
  • Green onions, chopped – ½ cup
  • Mint leaves, finely chopped – ½ cup
  • Olive oil – ¾ glass
  • Garlic – 2 cloves
  • Sea salt and ground black pepper

Directions

  1. To make the pesto sauce, stir together the green onions, mint, oil, minced garlic, salt, and pepper.
  2. Combine flour, olive oil, halloumi, hot water, and mint. Stir well to make a soft dough. Leave it on for 15 minutes. Place the dough on a floured surface and divide into 8 pieces. Roll each piece to a length of 30 cm. Place a few mint leaves on the strips. Brush with cooked pesto. Preheat a large nonstick skillet over medium heat. Fry the thin tortillas for 1 to 2 minutes on each side until golden and crispy. Brush the pesto, sprinkle with salt and serve.
