Puff Bread with Green Onions

An interesting Chinese recipe is a puff yeast bread with green onions. Boil the flour well with butter and you get a mega-flaky bread! I really liked the technology and what happened! Simple and delicious, and a thousand layers! We have not tried such bread yet!

Ingredients

For the test:

  • Flour – 300 g
  • Water – 200 ml
  • Dry yeast – 1 teaspoon
  • Sugar – 1 teaspoon
  • Salt – 0.5 teaspoon
  • Vegetable oil – 1 tbsp

For the shaving filling:

  • Flour – 100 g
  • Vegetable oil – 60 g
  • Green onions – 1 bunch

Besides:

  • Yolk – 1 pc.
  • Milk – 1 teaspoon
  • Sesame seeds – to taste

Directions

  1. The first step is to prepare the dough. We make a depression right in the bowl with flour, there – water, sugar, and yeast. Mix slightly and let stand in a warm place for 10-15 minutes. Then add salt and half of the vegetable oil to a cup of dough.
  2. Knead a soft dough. Then add the remaining butter and knead the dough for about 5 minutes. We send the dough into a cup, cover with a film and let the dough rise twice, in time – 50-60 minutes. We prepare the remaining ingredients.
  3. Preparing a shaving filling. It is traditional for many Chinese recipes. We heat the vegetable oil. Pour the flour with hot oil and mix quickly. Chop the green onion finely.
  4. We turn on the oven and heat it up to 200 degrees. Roll out the yeast dough into a large thin layer, 2 mm thick. Lubricate half of the dough with a mixture of flour and butter and sprinkle with green onions.
  5. Cover the filling with half of the dough not greased. On top, we also distribute some of the flour with butter and sprinkle with green onions. Fold the filled dough in half lengthwise again. Lubricate with the remaining shaving brush and sprinkle with green onions.
  6. Then we roll up the filled dough into a tight roll, starting from the narrow side. Roll the blank-roll into a thick cake, about 1 cm thick. Carefully so that the filling does not tear the dough.
  7. We transfer the puff pastry with green onions into the prepared form (my form is 26 cm in diameter), covered with parchment. Lubricate the cake with yolk mixed with milk and sprinkle with sesame seeds.
  8. We bake puff bread in the oven, preheated to 200 degrees, until golden brown. Our oven did it in 18 minutes.
  9. The puff pastry with green onions is delicious! Now, with this technology, I want to try a sweet filling instead of onions. How I cook, I will share!
