Ingredients

  • 150 g lentils, red
  • 500 ml vegetable stock
  • 1 clove garlic (optional)
  • 6 tablespoon olive oil
  • 2 tablespoon vinegar
  • 1 small onion (s)
  • 10 small tomato (s)
  • herbs, fresh (e.g. parsley)
  • salt and pepper

Instructions

  1. Cook the lentils in the vegetable stock for about 8 minutes and then drain. The package says 12 minutes - but it should still have a bite! Just try it. In addition, it says on my package that you should rinse the lenses with cold water beforehand. But that made them very muddy the first time, I didn`t do it anymore and thought it was better.
  2. Peel the garlic and chop in to fine slithers. Mix the garlic, olive oil, vinegar, salt and pepper into a dressing and pour over the lentils.
  3. Finely dice the onion, cut the tomatoes into pieces and chop the herbs. Mix everything with the lentils and season the salad again before serving.
  4. 100 g red lentils contain approx. 27 g protein, so they are well suited for a vegetarian diet!
