Ingredients
For the dough:
- 250 g butter, semi-fat
- 250 grams sugar
- 5 egg (s), separated
- 300 grams flour
- 25 g cocoa powder
- 1 packet baking powder
- 200 ml red wine
- 100 g chocolate, finely chopped
For the glaze:
- 200 g couverture, dark chocolate

- For the dough, beat the butter with sugar until very frothy. Stir in the egg yolks one at a time.
- Mix the flour with cocoa and baking powder and sift in portions alternately with the red wine and stir in well.
- Beat the egg white with a little salt until very stiff and fold in with the chocolate.
- Spread the dough on a greased sheet (preferably with a baking frame) and bake at 180 ° C for about 35-40 minutes.
- Let the cake cool down. Then melt the couverture in a water bath and cover the cake with it.
