Ingredients

  • 6 jacket potato (s), boiled (mainly waxy)
  • 4 tomato (s)
  • 4 egg (s)
  • 0.5 ½ bunch chives
  • 50 g cheese, rated (e.. Gouda)
  • some oil
  • salt and pepper
  • Paprika powder, hot pink

Instructions

  1. Cut the peeled, boiled potatoes into slices. Heat some oil in a non-stick pan and fry the potato slices until golden brown.
  2. Cut the chives into fine rolls and whisk with the eggs, season well with salt and pepper. Finely dice the tomatoes and add to the potatoes. Pour the egg mixture over it and let the egg set on a low flame. Sprinkle with grated cheese.
  3. Mix well and cook on a high flame to the end, season with paprika powder and, if necessary, salt and pepper and serve hot.
