Rhubarb Cake with Coconut Flakes

Ingredients

600 g rhubarb
3 egg (s), separated
100 g suar
100 g desiccated coconut

Instructions

Mix the margarine with the sugar until frothy. Add the remaining dough ingredients to the foamy mass and knead everything into a dough. Cover and let the dough rest in the refrigerator for 15 minutes. Line a greased springform pan with the batter.
Wash and peel the rhubarb and cut into 2 cm long pieces. Mix egg yolks and sugar into a creamy mixture. Mix the rhubarb and coconut flakes into this mixture. Finally, carefully fold the whipped egg whites into the mixture. Put the rhubarb filling in the springform pan.
Bake in a preheated oven at 200 ° C for 45 minutes.
