Ingredients

  • 60 g rice, (whole rain basmati rice)
  • 0.5 ½ zucchini
  • 1 red pepper (s)
  • 1 carrot (s)
  • 1 teaspoon oil, for frying
  • Curry powder
  • 75 g smoked tofu
  • Margarine, for the mold
  • 100 ml coconut milk, (light)
  • salt

Instructions

  1. Prepare basmati rice according to the instructions on the packet. Dice paprika, zucchini and carrot and cook in the steamer until firm to the bite. Season the vegetables with the curry.
  2. Cut the tofu into not too large cubes and fry in oil. Add rice and tofu to the vegetables and mix everything well. Season to taste with the salt.
  3. Grease a baking dish and add the vegetable-tofu-rice mixture. Salt the coconut milk to taste and spread it over the mixture. If necessary, dilute with a little water. Put the whole thing in the preheated oven at 200 ° C and cook for about 30-40 minutes (depending on the oven).
