Ingredients

  • 300 g rice or whole rain rice, cooked, cooled
  • 2 egg (s)
  • 3 tablespoon parmesan, grated
  • 3 tablespoon flour
  • 2 tablespoon water
  • 1 shallot (s) or
  • Onion (s), finely diced
  • 1 teaspoon salt
  • 1 pinch (s) black pepper
  • 1 pinch (s) nutmeg, grated
  • 1 bunch chives
  • butter for frying

Instructions

  1. Beat the eggs with the whisk, stir in the flour, parmesan and water. Add the shallot cubes and the rice, season well and mix everything together well. Let rest for 15 minutes.
  2. Put a large piece of butter in a coated pan that is not too hot and spread the mixture on top. Fry for 10 minutes over medium heat. To turn, divide the mixture into 4 pieces and carefully turn the pieces over. Fry another 10 minutes.
  3. Sprinkle with chives rolls to serve. Tastes very good with pan-fried foods, fish, scampi or just like that with salad.
