Ingredients

  • 1 large apple, sour
  • 8 scallop (s) without shells
  • 1 tablespoon sesame seeds
  • some balsamic reduction
  • 2 tablespoon chives, finely chopped
  • 5 tablespoon spice mixture (Zane and Zack`s Habanero Infused Sugar) or
  • Chilli flakes and
  • Sugar, brown
  • 3 tablespoon clarified butter
  • Salt (fleur de sel) or normal

Instructions

  1. Peel and core the apple and cut into 8 slices. Briefly toast the sesame seeds and set aside.
  2. Melt the clarified butter in a pan over low heat. Turn the apple slices on both sides in clarified butter and then roll them in the sugar-chilli mixture.
  3. Now bring the pan to medium heat. Open the windows (unless you like the chili itching in your nose ). Then fry the apple slices on both sides in the hot pan until they have a slightly brownish caramelized crust (5 - 10 min). Take out of the pan and set aside.
  4. Now fry the scallops briefly in the same pan (they are good if they are slightly firm, the time depends heavily on the thickness, approx. 1 - 2 min.). Season with a little fleur de sel.
  5. Spread the apple slices on 4 preheated plates, top with scallops and garnish with chopped chives, balsamic vinegar reduction and sesame seeds. Put it on the table immediately!
