Ingredients
- 500 g sauerkraut (not canned), drained well
- 0.5 ½ spring onion (s), green, finely chopped
- Egg (s)
- Flour
- salt and pepper
- oil
- 4 sausages
- possibly applesauce, warm, coarse

- Drain the sauerkraut well and try to remove as much moisture as possible. Possibly Place sauerkraut between 2 paper towels and squeeze out. Put the sauerkraut in a bowl, mix well with the eggs, flour, green onions, salt and pepper.
- Put the oil in a pan, heat it up and add small heaps of the sauerkraut mixture to the hot oil and flatten with a fork. When it turns a little brown, turn it over (about 4 minutes). Put on a plate and keep warm.
- Cut the sausage into thin slices and cook and brown under the grill. Arrange sauerkraut pancakes with bratwurst on plates and, if you like, serve with warm, coarse applesauce.
- Kielbasa or any other smoked sausage can be used instead of bratwurst.
