Ingredients

  • 800 g pumpkin meat (nutme squash)
  • 1 apple, (Boskop)
  • 2 shallot (s)
  • 1 clove garlic
  • 20 g iner
  • 2 tablespoon butter, (clarified)
  • 1 lime (s) or lemon
  • sugar
  • salt
  • Cayenne pepper
  • 1 bunch parsley

Instructions

  1. Cut the pumpkin and apple into cubes of 10 mm edge length (not larger), the shallots, garlic and ginger into tiny cubes. Wash, dry and finely chop parsley. Heat the clarified butter in a deep pan (28 cm) and sweat the shallots, garlic and ginger cubes briefly. Add the pumpkin and apple cubes and sweat too. Pour in the lime juice, mix in a teaspoon of sugar and let the vegetables simmer gently for 10-15 minutes with the pan closed. The pumpkin cubes are done but still firm to the bite, the apple pieces are very soft or have already disintegrated into puree. Season to taste with sugar, salt and cayenne pepper. Fold in the parsley and serve. A suitable vegetable side dish for meat, fish or, for vegetarians, only with rice and pasta.
