Snack Muffins on Kefir, from Pea Flour

Snack muffins in paper tins are very convenient for serving in portions, they are a great alternative to regular bread for a bowl of soup. According to this recipe, kefir muffins are made from healthy pea flour, which cannot but delight fans of healthy eating. Making pea muffins won’t take much of your time, so repeating this recipe in your kitchen won’t be a problem.

Ingredients

  • Pea flour – 150 g
  • Eggs – 3 pcs.
  • Kefir (or yogurt, or yogurt) – 175 ml
  • Baking powder – 2 teaspoon.
  • Tomato – 1 pc.
  • Salt – 1 teaspoon
  • Ground black pepper – 1/4 teaspoon.
  • Dried Provencal herbs (optional) – 1 teaspoon.

Directions

  1. Combine eggs with salt, black pepper and dried herbs.
  2. Beat the eggs with a whisk or fork.
  3. Add kefir (or other fermented milk product) to the beaten eggs.
  4. Beat again.
  5. Mix pea flour with baking powder.
  6. Add the flour mixture to the egg mass.
  7. Mix thoroughly so that there are no lumps.
  8. We prepare a baking dish for muffins: grease with vegetable oil or insert paper capsules. We spread the dough into the prepared form. We fill each mold with dough approximately 2/3, as the dough on kefir will rise.
  9. Put one tomato slice in each mold.
  10. We bake muffins on kefir, from pea flour, in an oven preheated to 180 degrees, 20-25 minutes.
