Ingredients
- 225 g soba noodles, optionally another type noodle
- 2 pak choi, or savoy cabbage or chard
- 1 small cucumber (s)
- 1 organic lime (s)
- 2 spring onion (s)
- 1 clove garlic
- 1 bunch mint
- 50 g peanuts
- 6 tablespoon soy sauce
- 30 g peanut butter
- 20 g honey
- 1 chilli pepper (s), dried
- 1 tablespoon vegetable oil

- Rub the peel of the lime, squeeze the lime. Finely chop the peanuts. Finely dice the garlic.
- Put the soy sauce with peanut butter, half of the peanuts, the grated lime zest, the juice of the squeezed lime, honey, garlic, chilli and oil in a tall container and puree finely with a blender. Season with salt and pepper to taste.
- Wash the pak choi, remove the stalk and cut into bite-sized pieces. Cut the spring onions into thin rings. Finely chop the mint leaves. Quarter the cucumber lengthways and cut into 5 mm wide pieces.
- Cook the pasta according to the instructions on the packet. Then put the pak choi in the pot and let everything sit in the water for a minute. Drain the soba noodles with pak choi and mix with the peanut dressing in the previously used saucepan. Also add the spring onions, cucumber, remaining peanuts and mint to the saucepan and stir.
- We always change this recipe if I can`t find a pak choi or soba noodles.
