- 1 egg (s)
- 50 ml milk
- some vegetable broth
- Fresh herbs (parsley, chives)
- 90 g breadcrumbs

- Whisk the egg with the milk, add the vegetable stock and the chopped herbs. Then I gradually add the breadcrumbs until a mushy mass is formed. The dough shouldn`t be too firm. Then I form small dumplings out of it, which I then add to the hot soup. The dumplings are ready when they float to the surface.
- The dumplings taste very good in clear soups.
