Ingredients

  • 1 cup beans, white (soak in water overnight!)
  • 1 large onion (s), diced
  • 2 cloves garlic, more if you like
  • 2 tomato (s)
  • 2 tablespoon tomato paste
  • bacon
  • 1 ½ liters water
  • thyme
  • 500 g mixed veetables (carrots, leek, peas, potatoes, bell pepper, zucchini) cut into small pieces
  • 1 sausage (chorizo), spicy Spanish sausage
  • Vegetable broth, instant
  • salt and pepper
  • Paprika powder

Instructions

  1. Soak the beans in enough water overnight.
  2. Fry the onions, garlic and add tomato paste, tomatoes and bacon.
  3. Strain and add the beans, pour in the water. Season and simmer gently for 1 1/2 hours.
  4. Then add the chopped vegetables and the sausage slices, simmer for another 20 minutes.
  5. Season to taste and sprinkle with fresh parsley.
