Ingredients

  • 1 kg spare ribs, fresh from the butcher
  • 3 tablespoon tomato ketchup
  • 1 tablespoon forest honey
  • 1 tablespoon barbecue sauce, smoky, e.g., Heinz
  • 1 ½ teaspoon soy sauce
  • 1 ½ tablespoon balsamic vinegar, white
  • 1 tablespoon apple juice, naturally cloudy
  • 1 small onion (s)
  • 1 ½ teaspoon mustard, hot
  • 1 ½ teaspoon sugar, brown
  • 0.5 teaspoon ½ garlic granules
  • 0.5 teaspoon ½ paprika powder, noble sweet
  • 1 teaspoon salt
  • 1 teaspoon pepper, colored, ground
  • 1 teaspoon rosemary, cut
  • 1 teaspoon thyme, rubbed
  • 1 teaspoon oregano, grated
  • 1 teaspoon basil, rubbed
  • Chilli flakes, from the mill

Instructions

  1. Wash the spare ribs, pat dry and divide into portion-sized pieces of 2 - 4 pieces. Cut the onion into small cubes.
  2. For the marinade, mix the ketchup, honey, the sauces, vinegar, the spices and the onion cubes in a saucepan and bring to the boil. Let the marinade simmer over a low heat for about 10 minutes until it has a slightly creamy consistency.
  3. Preheat the oven to 150 ° C top / bottom heat. Let the marinade cool down quickly in a saucepan.
  4. Spread out the aluminum foil on a baking sheet. Brush the marinade all around the spare ribs with a pastry brush. Place the pieces of meat with the bone facing down on the aluminum foil and cover the pieces of meat with another layer of aluminum foil, sealing the aluminum foil tightly.
  5. Gently cook the pieces of meat for about 1.5 hours in the oven at 150 ° C top / bottom heat on the middle rack.
  6. Then remove the upper aluminum foil. Slide the baking sheet into the oven on the top rail and grill the spare ribs for approx. 10-15 minutes at 250 ° C using the oven`s grill function. The exact time depends on the oven, the spare ribs are ideal if the marinade on the pieces of meat is dark.
  7. Place the baking sheet on the middle rail in the oven and use the grill function to let the pieces of meat rest at approx. 100 ° C for approx. 10 minutes.
  8. Various salads, fresh baguettes, French fries, barbecue potatoes, etc. are suitable as side dishes.
