Ingredients

  • 150 g spiced speculoos
  • 4 egg yolks
  • 100 g suar
  • 3 packs vanilla sugar
  • 100 ml apple juice
  • 400 g whipped cream
  • 100 g chocolate, white

Instructions

  1. Put a leak-proof dish with a volume of approx. 1.5 liters, e.g. a loaf pan, in the freezer.
  2. Crumble the spiced speculoos. Put the egg yolks with the sugar, the vanilla sugar and the apple juice in a large stainless steel mixing bowl and mix well. Beat the egg-sugar mixture in a hot, non-boiling water bath with a whisk until the mixture is heavy and compact. Then put the bowl in cold water and keep beating the mixture until it has cooled down.
  3. Whip the cream. Stir the speculoos crumbs into the mixture and carefully fold in the cream. Then pour into the chilled pan and let freeze for at least 6 hours, preferably overnight.
  4. Pour liquid chocolate onto a baking sheet, let it cool and scrape the chocolate shavings off the sheet with a spatula or cake server.
  5. To overturn the form, briefly put the bottom in hot water. Portion and serve on plates. Decorate with the chocolate shavings.
