Ingredients

  • 3 egg (s)
  • 150 g mararine or softened butter
  • 180 g wheat flour
  • 1 tablespoon ajvar (paprika paste)
  • 0.5 ½ bell pepper (s), red
  • 0.5 ½ bunch parsley, smooth
  • 1 teaspoon, heaped baking powder
  • 1 teaspoon, leveled salt
  • 1 pinch (s) allspice, ground
  • some black pepper
  • 1 tablespoon paprika powder (mild or hot, to taste)
  • 1 tablespoon herbs, dried (e.g. marjoram, thyme or oregano)
  • 50 g parmesan or pecorino, finely rated
  • fat, for the shape

Instructions

  1. Wash, halve and core the bell pepper. Cut one half into thin strips and then into very fine cubes. Chop the parsley very finely.
  2. Then put the eggs, margarine or softened butter, baking powder and ajvar in a mixing bowl and stir vigorously with the hand mixer. Now add flour, spices and herbs. If you like it spicier, you can take rose pepper. Process into a smooth dough. If it is too thin, add a little more flour. Finally stir in the diced paprika and finely grated cheese.
  3. Fill into a greased muffin tin or molds and bake in a preheated oven for 20 to 25 minutes at around 175 degrees (convection). If the muffins are still warm, they are still very moist in the middle. That subsides as it cools down. Because of the cheese and ajvar, the muffins don`t rise as high as sweet pastries.
