Ingredients

  • 2 egg (s)
  • 250 g flour, (wheat flour or whole wheat flour)
  • 1 packet baking powder
  • 0.5 teaspoon ½ baking soda
  • 150 g potato (s), boiled
  • 50 ml oil
  • 250 ml beer, light
  • 125 g bacon, diced
  • chives
  • salt and pepper

Instructions

  1. Fry the bacon well in a pan. Mash the boiled potatoes with a fork.
  2. Beat the eggs with the mixer until frothy. Add flour, baking powder, baking soda, potatoes, oil and beer and work into an even dough. Season with salt and pepper. Fold in the bacon and the chives cut into small rolls.
  3. Grease the molds of a muffin tray well or line them with paper molds and fill in the batter. Bake in the preheated oven with top-bottom heat 190 degrees or convection 175 degrees for 25 to 30 minutes.
  4. Can be served lukewarm and cold. The muffins make an onion soup for the main course, are a nice accompaniment to a salad or are great as finger food on a buffet.
