Ingredients

  • 16 scallop (s), raised
  • 3 tablespoon olive oil
  • 1 chilli pepper (s), fresh
  • 1 tablespoon honey
  • 1 orange (s)
  • 1 tablespoon butter, cold
  • sea-salt
  • 1 tablespoon parsley, roughly cut for garnish

Instructions

  1. For this dish, it is important that you have all the ingredients ready.
  2. Wash the scallops, pat dry and cut crosswise on each side with a sharp knife. Please make sure that the cut is not too deep (very important). Slice the chilli lengthways, remove the stones and then chop finely. Squeeze the orange and prepare the juice.
  3. Heat the olive oil in a heatproof pan or wok. Fry the scallops very hot and over full heat, add the chilli peppers. Deglaze with orange juice, add the cold butter and honey and reduce over full heat or cook until creamy. The whole procedure should not take longer than 3-4 minutes, otherwise the scallops will get too dry. Finally, season the whole thing with sea salt and sprinkle with coarsely chopped parsley. Crispy baguette is served with it.
  4. IMPORTANT: This dish is not easy to cook. Since I have a gas stove that is as good as new, the heat is greater and can therefore only report a cooking time of 3-4 minutes.
