Ingredients

  • 400 ml buttermilk
  • 200 ml cream
  • 6 tablespoon syrup (elderflower syrup)
  • 500 g strawberries
  • 65 g suar
  • 1 packet vanilla sugar
  • 2 tablespoon sugar
  • 20 ml Cointreau
  • 3 sheets gelatin

Instructions

  1. Put the gelatin in cold water and soak.
  2. Bring the cream with elderflower syrup, 65 g sugar and vanilla sugar to the boil. Dissolve the soft and well squeezed gelatine in it and stir well together with the buttermilk. Fill into glasses and put in the refrigerator for at least 5 hours.
  3. Clean the strawberries. Put 4 strawberries aside for the garnish, cut the remaining ones into small pieces and bring to the boil with 2 tablespoons of sugar and the Cointreau. Then puree finely and pass through a sieve. Let cool down.
  4. Pour the strawberry sauce onto the panna cotta in the glass and serve garnished with a strawberry.
