- 3 small zucchini
- 2 tomato (s)
- 1 small onion (s)
- 0.25 ¼ honeydew melon (s)
For the dressing:
- 1 lemon (s)
- 1 tablespoon olive oil
- honey
- mustard
- Lemon pepper
- salt

- Cut the zucchini, tomatoes, onions and melon into small cubes.
- For the dressing, squeeze the lemon, add honey and mustard depending on your taste, season with salt and lemon pepper, finally stir in 1-2 tablespoons of olive oil.
- Add the marinade to the diced vegetables and let steep for about 10-15 minutes.
- Do not mix too much marinade, as the salad will draw some water through the zucchini.
- The salad tastes wonderful as a starter with a crispy bruschetta or as an accompaniment to grilled meat or fish. It`s a wonderful recipe for tackling the zucchini glut.
