Wash rice until the sewage runs clear. Bring the rice to the boil with 375 ml of water and cover and allow to soak for 15 minutes on the lowest setting. Remove from heat and let soak for another 15 minutes.
Mix rice vinegar, mirin, salt and cane sugar in a saucepan over medium heat until all ingredients have dissolved, then allow to cool.
Spread the liquid over the rice, cover with a damp cloth and place in the refrigerator. When the rice has cooled, it can be further processed into sushi.
