Ingredients

  • 2 egg (s)
  • 1 tomato (s)
  • 0.5 ½ onion (s), red
  • 2 stalks celery green
  • 4 stalks coriander green
  • 2 spring onion (s)
  • 1 chilli pepper (s), red, possibly more
  • 2 tablespoon lime juice
  • 3 tablespoon soy sauce, light
  • 3 teaspoons sugar
  • Oil for frying

Instructions

  1. Wash the tomato and cut into pieces. Peel, quarter and thinly slice the onion. Wash and roughly chop the celery greens, coriander greens and spring onions. Set the vegetables aside.
  2. Either cut the chilli into large pieces and mash in a mortar or - if there is no mortar available - crush it with a knife and then cut into slices. Add the lime juice, soy sauce and sugar to the chilli and stir until the sugar is dissolved. Set the salad dressing aside.
  3. Heat the oil in a pan or in a wok. Prepare fried eggs from the eggs, frying on both sides until the yolks are firm and the eggs are crispy. Then remove the fried eggs and cut into large pieces.
  4. Mix the vegetables, fried eggs and salad dressing together and serve the salad.
