Ingredients

  • 1 ½ kg tomato (s), fresh, cut into pieces
  • 0.5 kg ½ onion (s), diced or cut into rings
  • 3 clove (s) garlic, finely chopped
  • 125 g raisins
  • 375 ml vinegar (wine vinegar)
  • 0.5 kg ½ sugar
  • 0.5 tablespoon ½ flour or cornstarch
  • 3 tablespoon mustard, hotter
  • 1 tablespoon curry powder
  • 1 tablespoon chilli pepper (s), ground or coarsely ground
  • 1 teaspoon turmeric
  • 1 teaspoon ginger powder
  • 1 teaspoon spice mix (Garam Masala)
  • 2 tablespoon salt

Instructions

  1. First mix the tomatoes, onions and garlic with the 2 tablespoons of salt and leave to stand overnight. Pour off the resulting water before further preparation.
  2. Cover the tomatoes with onions and garlic with the raisins, vinegar and sugar and simmer for 45 minutes. Stir occasionally. Then stir the flour or cornstarch with a little water until smooth and add. Add the mustard, curry powder, chili peppers, turmeric, garam masala and ginger powder. Let it simmer for another 15 minutes. Remove the lid so that it boils down a little.
  3. Then pour the mixture into prepared jam jars and close immediately. Chill until ready to eat.
  4. With the stated quantities, you get 6-8 jam jars.
  5. Tip: Depending on your taste, you can round off the whole thing with other spices from Indian cuisine.
