Ingredients

  • 500 g broccoli, (fresh or frozen)
  • 250 g tortellini
  • 2 tablespoon butter, or margarine
  • 1 tablespoon flour
  • 250 g whipped cream
  • 20 g cashew nuts
  • some sugar
  • Pinch salt

Instructions

  1. Wash and clean fresh broccoli and cut into small florets. Then put in boiling salted water and cook in it for 8-10 minutes. Only cook frozen broccoli briefly until it is firm to the bite.
  2. Then drain the broccoli and collect the cooking water. Drain well.
  3. In the meantime, cook the tortellini according to the instructions and drain well.
  4. Melt the fat in a high pan, add flour and sauté. Add 125 ml broccoli water and the whipped cream. Mix everything quickly with a whisk, then simmer gently for about 5 minutes. Add salt and sugar to taste.
  5. Now add the vegetables and tortellini to the sauce and briefly heat up again.
  6. Arrange the broccoli, tortellini and some of the sauce on a plate and sprinkle a few cashew nuts on top.
