“Turtle” Cake with Yoghurt Cream

The “Turtle” cake made of biscuit dough with yogurt cream is an unusual and very tasty cake that can be easily and simply prepared at home.

Ingredients

  • For the test:
    Eggs – 6 pcs.
    Sugar – 1 cup (180 g)
    Flour – 2 cups (260 g)
    Baking soda – 1 teaspoon
    Vinegar for extinguishing soda – 1 teaspoon

  • For the cream:
    Sweet and sour yogurt – 1 l
    Kefir – 0.5 cups

  • For glaze:
    Sour cream – 4 tablespoon
    Butter – 120 g
    Sugar – 4 tbsp
    Cocoa powder – 3 tablespoon

Instructions

  1. Cooking biscuit dough for the cake. Break the eggs into a bowl, in which we will beat them. Pour granulated sugar.
  2. Beat eggs with sugar with a mixer for 15 minutes.
  3. Before adding flour to the dough, sift it through a sieve.
  4. Little by little, pour the flour into the beaten egg mass, gently mix the biscuit dough.
  5. Add baking powder (2 teaspoons) or soda slaked with vinegar.
  6. Now bake a biscuit. To prevent the dough from sticking to the baking sheet, cover it with baking paper. Collect the dough with a teaspoon spread it with cakes on a baking sheet. Leave a distance of about 3 cm between the cakes so that they do not stick together when baking. Put the baking sheet in the oven preheated to 180 ° C.
  7. Since the biscuits are thin, they bake quickly. It is not necessary to brown them too much. When the cakes “grab”, darken at the edges (the top remains light in color), you can take them out of the oven. While the first batch of cakes is baking, put the next batch of baked goods on the second baking sheet.
  8. Take out the finished biscuit cakes from the oven, remove them from the paper, put them on a plate. The biscuits become as tough as they cool. There is no need to worry about this, as the biscuit dough is porous and, once soaked in the cream, it will become soft again.
  9. When have baked all the biscuits, practice forming a turtle out of them. Place three biscuits in the center of the plate.
  10. Put all the biscuits on them one by one. Here is such a round slide.
  11. Preparing the impregnation cream. The classic cream for the Turtle cake is sour cream. But move a little away from the usual cream, instead of the fat sour cream, make a light low-calorie cream of yogurt. To do this, mix sweet and sour yogurt with kefir. Set aside 6 biscuits for the turtle’s head and legs. Set aside a small piece of the tortoise’s tail biscuit. The rest of the biscuits will be dipped in yogurt cream.
  12. Begin to lay out the shell of the turtle. Dip all the biscuits (except for the deferred biscuits) in the cream, lay them out alternately with a slide. Pour the remaining yogurt cream on top. Now put the cake in the refrigerator for 20 minutes.
  13. Cooking chocolate icing. Mix granulated sugar with cocoa powder. Add sour cream, mix. Throw pieces of butter.
  14. Put on fire. Stir constantly, lightly boil the glaze. After dissolving the butter, without ceasing to stir, it is enough to boil for two minutes.
  15. Grease the “Turtle” cake with chocolate icing. Since chilled the cake, the icing on it cools quickly. Now make patterns with a skewer.
  16. Gently insert the legs and tail under the tortoiseshell. Glue two cakes with the glaze – this is the turtle’s head. Insert the turtle’s head under the shell, draw the eyes with glaze.
  17. Place the “Turtle” cake with yogurt cream and chocolate icing in the refrigerator for about 4-5 hours.
