Vegetable Stew with Beans and Smoked Ribs Ingredients

  • Smoked pork ribs – 200 g
  • White beans – 50 g
  • Potatoes – 3 pcs.
  • Carrots – 1 pc.
  • Bulb onions – 1 pc.
  • Salt to taste
  • Hot pepper – to taste
  • Bay leaf – 1 pc.
  • Fresh parsley – for serving

  1. Soak the beans overnight in cold water, drain the water in the morning.
  2. Pour water into a saucepan (the desired stew density depends on its volume), put ribs and beans in the water. Cook until beans are half cooked.

  3. Coarsely chop the potatoes.
  4. Cut the carrots into small pieces.
  5. Finely chop the onion.
  6. Not everyone loves boiled onions, so I recommend putting them in stews while boiling beans and ribs. The taste and aroma will remain, and the onion itself will “dissolve” in the broth.

  7. When the beans are almost done, add the carrots and potatoes. Bring to a boil and simmer vegetables with beans and pork ribs over low heat until vegetables are soft. Add bay leaf 15 minutes before cooking. Salt to taste.
