Ingredients

  • 1 large zucchini, peeled, pitted and diced
  • 2 large onions, quartered
  • some dill, dried
  • some chilli, dried
  • some mustard seeds
  • some peppercorns
  • 2 liters water
  • 0.5 liter ½ vinegar, (10%)
  • 50 g salt
  • 150 grams sugar

Instructions

  1. Peel and core the zucchini and cut into evenly sized cubes. Peel and quarter the onions. Now prepare the glasses: In each glass of zucchini, 1/4 onion, 1 tablespoon mustard seeds, 4 peppercorns, 1 small dried chilli, and 1 tablespoon dill (dried) or 1 stalk. The liquid information relates to 6 normal pickle jars, so they should be reduced or enlarged accordingly. Bring the water, vinegar, sugar and salt to the boil in a pan and pour hot over the zucchini. Close the jars tightly and turn them over, let them close or boil down. The zucchini have a taste like cucumber, but the chilli makes them nicely spicy and is therefore also suitable as additions to Soljanka.
