Ingredients

For the dough:

  • 1 kg flour, (wheat flour)
  • 40 g yeast, fresh
  • 100 g suar
  • 1 pinch (s) salt
  • 120 g butter, melt
  • 1 lemon (s) - zest, grated
  • 650 ml milk, lukewarm

For the filling:

  • 150 g jam (blackberry)
  • 1 apple, sour
  • 100 g butter, for the mold

For the cast:

  • 1 liter sour cream
  • 50 grams sugar
  • 0.5 teaspoon ½ cinnamon

Instructions

  1. Prepare a soft yeast dough from the first ingredients. Divide this into 20 pieces, fill each piece with 1/2 teaspoon blackberry jam and a few apple pieces and shape into a thick noodle (like steamed noodles). Place in a large purée (30 x 38 cm) with melted butter for last rising.
  2. After the yeast noodles have risen nicely, they are baked in the oven at 180 ° C (convection) for about 20 minutes. During this time mix the sour cream with sugar and cinnamon and pour over the yeast noodles after the first baking time. Bake for another 10 minutes.
  3. Dust with icing sugar while it is still hot and serve immediately.
  4. As a dessert, this amount is sufficient for about 20 servings.
  5. In the Reichraminger Hintergebirge in the Kalkalpen National Park, this dish is also prepared with blueberry jam (instead of blackberry).
