Yeast Rolls with Curd Filling

As always, the most delicious recipes are the dishes proven over the years. Today is one of my grandmother’s recipes. Delicious pastries for tea! It is easy to prepare, but it turns out very tasty. Try baking yeast bagels with this cottage cheese filling. My grandma’s recipe will conquer anyone!

Ingredients

For the dough:

  • Flour – 300 g
  • Butter (slightly frozen) – 125 g
  • Milk (warm) – 50 ml
  • Sugar – 20 g
  • Pressed yeast – 15 g
  • Egg – 1 pc.
  • Salt – 1 pinch

For filling:

  • Cottage cheese – 150 g
  • Sugar – 40 g
  • Semolina – 2 tbsp
  • Sour cream – 3 tbsp
  • 1/2 lemon zest

For greasing bagels:

  • Yolk – 1 pc.
  • Milk – 1 tbsp

For filing:

  • Powdered sugar – to taste

Directions

  1. Let’s start with the test. The products are the simplest.
    Butter – slightly frozen.
    We heat the milk until warm (about 37-40 degrees).
  2. We make a quick dough to activate the yeast: add 1 teaspoon of sugar, 1 teaspoon of flour and crumbled yeast to warm milk, mix and let stand for a few minutes.
  3. Rub the cold butter on a coarse grater into a bowl of flour.
  4. Add the remaining sugar and salt to the flour and butter, grind everything into crumbs.
  5. My yeast is excellent, it works well.
  6. Add the matched dough and egg to the flour and butter crumbs.
  7. We knead the dough. We don’t knead such a dough for a long time, 2-3 minutes on the table – and you’re done.
    Then we put the dough into a cup, cover it with a lid and send it to the refrigerator (while we are busy with the filling).
  8. Today the filling is my favorite (after the meat one).
  9. Knead the cottage cheese with sugar. Continuing to knead, we introduce semolina and sour cream. Using a fine grater, remove the zest from the lemon and add to the curd mass. We mix.
    We taste it for sugar and bring it to taste.
    Let the filling stand for 10 minutes.
  10. We turn on the oven and heat it up to 180 degrees.
    For convenience, we divide the dough into four equal parts (blanks).
  11. We roll each piece into a thin cake with a diameter of 25 cm and divide it into eight sectors (like a pizza).
  12. We spread 1 teaspoon of the filling on the wide part of each sector of the dough, slightly stepping back from the edge.
  13. Cover the filling with a free wide edge of the dough so that the curd remains inside. Press lightly around the edges.
  14. We roll up the bagels (roll to the narrow part).
  15. To grease the bagels, mix the yolk and some milk.
    We send the bagels onto a baking sheet covered with parchment (I got two batches) and grease them with yolk and milk.
  16. We bake yeast rolls with curd filling in the oven at 180 degrees for 10-15 minutes (focus on your oven).
  17. Sprinkle the finished bagels, while hot, with powdered sugar.
