Ingredients

  • 200 g sheep cheese, diced
  • Lemon (s) - peel, chopped
  • 4 teaspoons oregano
  • 2 tablespoon olive oil
  • 1 liter vegetable stock
  • 240 g papaya (pieces)
  • 480 g zucchini, rated
  • Lemon juice
  • 2 tablespoon sesame seeds, toasted
  • salt and pepper

Instructions

  1. Marinate the sheep`s cheese in chopped lemon zest, oregano and olive oil.
  2. Bring the broth to the boil. Add the couscous and let it soak for 5 minutes over a low heat.
  3. Mix with the papaya pieces, zucchini and cheese. Season with salt, pepper and lemon juice.
  4. Serve the couscous and sprinkle with toasted sesame seeds.
