Ingredients

  • 1 small zucchini
  • 3 mushrooms or other mushrooms
  • 2 small tomato (s)
  • some oil
  • salt and pepper
  • 1 tablespoon sour cream, sour cream or crème fraiche
  • Parsley, finely chopped
  • some water or vegetable stock

Instructions

  1. Briefly dip the tomatoes in boiling water and peel them. Then cut into small cubes. Cut the zucchini into small sticks. Clean the mushrooms with kitchen paper and cut into slices.
  2. Let the oil get hot in the pan and fry the mushrooms in it for about 2 minutes. Reduce the heat, add tomatoes and zucchini to the pan and fry briefly. Then add a dash of water or vegetable stock and let everything simmer over low heat for about 5 minutes. The liquid must be almost completely boiled away. Stir in the sour cream to create a creamy sauce. Season to taste with salt and pepper. Stir in a little more chopped parsley and serve.
