  • 400 g chicken breast
  • 3 zucchini
  • 1 lemon (s), organic
  • 1 chilli pepper (s), red
  • 4 tablespoon oil
  • 1 teaspoon honey
  • salt
  • 3 cocktail tomatoes
  • 20 leaves parsley

Instructions

  1. Cut the chicken breast into 20 pieces about the thickness of a thumb, then marinate them. To do this, the lemon is grated,
  2. the chilli pepper finely chopped, seasoned with a little oil and honey, a little lemon juice can also be added.
  3. The pieces should marinate in it for at least 20 minutes, but longer does not hurt either.
  4. The washed zucchini are best cut lengthways on a slicer approx. 2 mm thick, salted and watered. Sear the chicken breast pieces in a pan in portions all around, remove, season with salt and allow to cool. Quarter cocktail tomatoes and halve and core them again so that you only have a small red corner.
  5. Pat the zucchini dry (with kitchen paper or kitchen towel), roll up a piece of chicken in each one, put on top
  6. Fix the parsley leaf and the small tomato corner, then fix it with a toothpick.
