Ingredients

  • 1 large zucchini (approx. -.5 kg)
  • 3 medium potato (s)
  • 1 onion (s)
  • 500 ml water
  • 250 ml white wine
  • 2 cloves garlic)
  • 2 teaspoons, heaped broth, clear or vegetable stock powder
  • 150 g sour cream
  • 3 sausages, (grilled sausages)
  • oregano blossoms
  • salt and pepper
  • possibly oregano

Instructions

  1. Wash, dry and cut the zucchini into pieces. Peel the potatoes and cut them into pieces. Chop the onion and garlic cloves into small pieces.
  2. Put everything in a large saucepan with white wine and water. Boil. Then add the vegetable stock or clear stock powder and stir in gently.
  3. Let the whole thing simmer for about 15-20 minutes.
  4. In the meantime, halve the sausages and cut into half rings.
  5. When the cooking time is up, puree everything, stir in the sour cream and add the pieces of sausage, while continuing to simmer. Add oregano flowers as needed.
  6. Now season everything with salt and pepper, possibly also with oregano.
  7. The soup is easy to prepare and tastes really good if it can steep for another 1-2 hours.
