Ingredients

  • 2 kg zucchini
  • 1 kg bell pepper (s), mixed colors
  • 500 g onion (s)
  • 500 ml vinegar, (herb vinegar or cucumber master)
  • 500 g suar
  • 1 liter water
  • 500 ml apple juice
  • 2 lemon (s), add the juice
  • 3 teaspoons curry powder
  • 1 handful salt
  • some peppercorns
  • 1 pck.spice mix, (cucumber spice for canning)

Instructions

  1. Slice the zucchini, chop the bell pepper and the onion into large pieces. Bring to the boil together with the remaining ingredients in a large saucepan (approx. 10 liters), let it boil for 3 minutes, stir occasionally and then immediately pour into glasses and close them.
  2. Let it steep for about 2 weeks before consumption.
