Ingredients

  • 400 g douh (rye sourdouh) and 100 5-rain flakes
  • 85 ml water to soak the flakes
  • 225 g flour (rye flour)
  • 125 g flour (wheat flour)
  • 200 ml water, lukewarm
  • 1 tablespoon, leveled salt and possibly 2 tablespoon baking malt
  • 80 g sesame or other seeds as desired

Instructions

  1. Soak the flakes and let stand for about 10 minutes. Then prepare a relatively soft bread dough from all the ingredients and let it rest for about 20 minutes.
  2. Knead the dough well again and pour it into a bread or loaf tin sprinkled with seeds. If you like, sprinkle with seeds and let rise for 1.5 to 2 hours.
  3. Bake at 175 ° C top and bottom heat for about 90 minutes.
