Almond Rolls with Ricotta Cream and Basil

Recipe for crispy almond tubes with a delicate aromatic filling of cream cheese with honey, lemon zest, and fresh basil.

Ingredients

  • Egg whites – 2 pcs.
  • Sugar – 1/3 cup
  • Flour – 3 tbsp
  • Ground almonds – 3 tbsp
  • Salt – 1/8 teaspoon
  • Olive oil – 2 tbsp
  • Vanilla sugar – 0.5 teaspoon
  • Ricotta – 1.25 cups
  • Cream cheese – 85 g
  • Honey – 2 tbsp
  • Chopped lemon zest – 2 teaspoon
  • Fresh basil – 2-3 leaves

Directions

  1. Preheat the oven to 190 degrees. Line a baking sheet with parchment.
  2. Beat the whites until firm. Add sugar and beat for 1 minute. Add flour, almonds, and salt and mix gently. Add butter and vanilla. Stir gently again.
  3. Put the protein dough on a baking sheet in the form of flat cakes (8 pieces with a diameter of 15 cm). Bake for 5-6 minutes.
  4. Remove the cakes from the baking sheet and immediately quickly roll them into rolls using a special metal tube rolling device or, for example, the cylindrical handle of the whisk.
  5. Grind the basil for the filling. Whisk the cream cheese in a bowl. While whisking, add honey and lemon zest. Then add ricotta and basil and stir.
  6. Fill the tubes with the prepared filling.
  7. Almond rolls with ricotta and basil cream are ready.
