Apple and Cinnamon Muffins with Caramelized Sprinkles

Instructions

Either fill the 12-cup muffin tin with paper cases or grease it with oil or butter.
For the crumble, melt the butter or melt it in the microwave, place in a bowl with flour, sugar and salt and either knead into crumble with your hands or with the dough hook of a hand mixer. Put aside.
For the dough, first wash, peel and grate 1 large or 2 small apples. Mix the flour with the baking powder and cornstarch in a bowl and sift through once. Put both aside.
Mix the yogurt, oil, sugar, a pinch of salt and 2 teaspoons of cinnamon in another bowl, then add the two eggs one after the other and mix well. Finally, carefully fold in the flour mixture and the grated apple.
Now carefully pour the dough into the molds and cover the top completely with the crumble (press lightly). Preheat the oven to 180 ° C, then slide in the muffins. After approx. 5 minutes reduce the temperature (approx. 160 ° C), then you need approx. 20 - 25 minutes (check with a stick sample). Dust everything with a little icing sugar about 5 minutes before the end of the baking time and bake.
