Ingredients

  • 250 g flour
  • 150 g suar, brown, (white is also possible)
  • 2 teaspoon, heaped baking powder
  • 2 teaspoons cinnamon powder
  • 1 pinch (s) salt
  • 2 medium egg (s)
  • 125 ml oil
  • 150 ml milk
  • 50 g chocolate, chopped
  • 2 apples
  • 3 tablespoon sugar, white
  • 2 teaspoons cinnamon powder

Instructions

  1. Peel the apples and cut into wedges. Then cut thin slices out of the wedges and put 12 of them aside (these will later be placed on the dough). Mix 3 tablespoons of sugar and 2 teaspoons of cinnamon. This cinnamon sugar is then sprinkled over the apple slices that have been set aside. Finely chop the chocolate and set aside. Preheat the oven to 180 ° C (top / bottom heat) or 160 ° C (convection). Fill the muffin tin with paper liners.
  2. Put the flour, baking powder, brown sugar, vanilla sugar, salt and cinnamon together in a bowl and mix together. In a second bowl, the eggs, milk and oil are then frothed with the electric mixer. As soon as the mixture is whisked well, add the flour mixture spoon by spoon until the dough is viscous. Then fold in the chopped chocolate and apple pieces and distribute the batter into the paper cases.
  3. After the dough has been distributed, put 2 more apple slices that have been set aside in the middle and press them a little into the dough. Then sprinkle the previously mixed cinnamon sugar over the muffins. Now everything goes in the oven for about 25 minutes.

  5. Depending on what kind of apples are used, the dough can become too dry or too runny. So please always pay attention and adjust the dough if necessary. I always use medium-sized apples that have firm flesh and fresh acidity.
