Apples – 1.3-1.5 kg
Sugar – 150 g
Semolina – 150 g
Water – 1 l

Directions
Peel and core the apples. You will need 1 kg of peeled apples. From 1.5 kg of unpeeled medium-sized apples, I got 1 kg of peeled.
Put the apples in a saucepan. Pour in 300 ml of water.
Cover with a lid put on fire and cook for about 7-10 minutes, until soft.
Then grind the apples with liquid in mashed potatoes with a blender.
Add the remaining water and sugar to the applesauce.
Bring, stirring constantly, until boiling. Then pour in the semolina in a thin stream with constant stirring.
Cook until thickened for 3-5 minutes.
We remove the pan from the heat and let the contents cool to 30-40 degrees.
We put a saucepan with apple mass in a container with very cold water and beat the mass with a mixer until it thickens and cools down to room temperature, about 5 minutes. If the water from a warm container with apple mass heats up, you must change it to a cold one.
In the process of whipping, the mass will thicken, become light, airy, and lighter.
