Ingredients
- 3 tablespoon vinegar, (mild apple cider vinegar)
- salt and pepper
- 0.5 teaspoon ½ mustard, milder
- 4 tablespoon oil, sunflower
- 3 tablespoon oil, hemp
- 2 tablespoon oil, walnut
- 1 shallot (s)
- possibly poultry broth or
- Apple juice

- Mix the vinegar and salt with a whisk until the salt has completely dissolved. Then add mustard and pepper and stir well too.
- Then gradually beat the oil into the vinegar until an emulsion has formed. If the dressing gets too thick, thin it down with a little poultry stock or apple juice.
- Finally, add the finely chopped shallot to the dressing.
- Brief information on hemp oil:
- Hemp oil is deep green and has a strong, nutty taste. The proportion of THC (tetrahydrocannabinol) is negligible, so that hemp oil does not have an intoxicating effect. In addition to its good taste, hemp oil contains all the essential fatty acids necessary for the human body and is therefore one of the most valuable edible oils - even if not very well known in German cuisine. It is available in health food stores or health food stores.
