Asian Fried Rice with Vegetables and Chicken

Ingredients
 

Rice:

  • 200 g rice long grain rice
  • 1 tbsp soy sauce
  • 1 tbsp oil

Meat:

  • 500 chicken fillet or chicken breast

Marinade:

  • 1 tbsp sesame oil
  • 4 cloves of garlic
  • 3 tbsp soy sauce
  • 1 teaspoon sugar
  • 1 tbsp cornstarch
  • a bit of salt
  • some pepper
  • some chilli powder
  • 1 tbsp neutral oil

Vegetables:

  • 150 g mushrooms
  • 1 red pepper
  • 1 large carrot
  • 1 onion
  • 2-3 tablespoons of heat-resistant oil
  • 1 tbsp soy sauce
  • a bit of salt
  • some pepper
  • some chilli powder
  • 3 spring onions

Eggs:

  • 2 eggs
  • a bit of salt
  • some pepper
  • some chili
  • 1 tbsp oil

Instructions

Rice:

  • First cook the rice as usual and let it cool down.

Meat:

  • Wash the meat, pat dry and cut into cubes or strips and place in a bowl.
  • Pour all the ingredients for the marinade over the meat and let it steep in the refrigerator for 30 minutes.

Vegetables:

  • Wash the peppers, cut in half, core and cut into strips.
  • Peel the carrot and cut into fine sticks.
  • Peel the onion and cut into strips.
  • Clean and quarter the mushrooms.
  • Wash the spring onions and cut into rings.
  • Heat a large pan with 2-3 tablespoons of oil and first fry the carrots for 2-3 minutes over high heat, stirring constantly.
  • Tip : I start with the carrots because they take the longest.
  • Next add the pepper strips and fry for another 2 minutes.
  • Then add onions and stir in.
  • Immediately afterwards add the mushrooms to the pan and fry for another 2 minutes.
  • Finally, add the spring onions to the pan and fry them briefly.
  • Carefully season with salt, pepper and a little chilli. Be careful with the salt, the soy sauce is already salty. Better to season again afterwards when everything is ready.
  • Tip : It is important that the pan is very hot. If necessary, add a little more oil.
  • Take the vegetables out of the pan and set aside.

Meat:

  • Heat the pan again and add the meat to the pan and also fry over high heat. This takes about 5 minutes.
  • Take the meat out of the pan and set aside.
  • Wipe the pan briefly with a kitchen towel.

The eggs:

  • Whisk the two eggs together in a bowl and season with a pinch of salt and pepper (chilli if necessary).
  • Heat the pan again and add 1 tablespoon of oil to the hot pan. Pour the eggs into the pan, let them set briefly and then stir.
  • Move the eggs aside, put the pan on medium heat and add the rice.
  • Add 1 tablespoon of soy sauce and 1 tablespoon of oil, mix the rice with the egg and fry.
  • Next, add the vegetables to the rice and carefully mix in.
  • Then add the seared meat to the pan and mix in.
  • Serve the fried rice in the pan or spread it on plates.
