Ingredients

Rice:

  • 200 g rice long grain rice
  • 1 tbsp soy sauce
  • 1 tbsp oil

Meat:

  • 500 chicken fillet or chicken breast

Marinade:

  • 1 tbsp sesame oil
  • 4 cloves of garlic
  • 3 tbsp soy sauce
  • 1 teaspoon sugar
  • 1 tbsp cornstarch
  • a bit of salt
  • some pepper
  • some chilli powder
  • 1 tbsp neutral oil

Vegetables:

  • 150 g mushrooms
  • 1 red pepper
  • 1 large carrot
  • 1 onion
  • 2-3 tablespoons of heat-resistant oil
  • 1 tbsp soy sauce
  • a bit of salt
  • some pepper
  • some chilli powder
  • 3 spring onions

Eggs:

  • 2 eggs
  • a bit of salt
  • some pepper
  • some chili
  • 1 tbsp oil

Instructions

Rice:

  1. First cook the rice as usual and let it cool down.

Meat:

  1. Wash the meat, pat dry and cut into cubes or strips and place in a bowl.
  2. Pour all the ingredients for the marinade over the meat and let it steep in the refrigerator for 30 minutes.

Vegetables:

  1. Wash the peppers, cut in half, core and cut into strips.
  2. Peel the carrot and cut into fine sticks.
  3. Peel the onion and cut into strips.
  4. Clean and quarter the mushrooms.
  5. Wash the spring onions and cut into rings.
  6. Heat a large pan with 2-3 tablespoons of oil and first fry the carrots for 2-3 minutes over high heat, stirring constantly.
  7. Tip : I start with the carrots because they take the longest.
  8. Next add the pepper strips and fry for another 2 minutes.
  9. Then add onions and stir in.
  10. Immediately afterwards add the mushrooms to the pan and fry for another 2 minutes.
  11. Finally, add the spring onions to the pan and fry them briefly.
  12. Carefully season with salt, pepper and a little chilli. Be careful with the salt, the soy sauce is already salty. Better to season again afterwards when everything is ready.
  13. Tip : It is important that the pan is very hot. If necessary, add a little more oil.
  14. Take the vegetables out of the pan and set aside.

Meat:

  1. Heat the pan again and add the meat to the pan and also fry over high heat. This takes about 5 minutes.
  2. Take the meat out of the pan and set aside.
  3. Wipe the pan briefly with a kitchen towel.

The eggs:

  1. Whisk the two eggs together in a bowl and season with a pinch of salt and pepper (chilli if necessary).
  2. Heat the pan again and add 1 tablespoon of oil to the hot pan. Pour the eggs into the pan, let them set briefly and then stir.
  3. Move the eggs aside, put the pan on medium heat and add the rice.
  4. Add 1 tablespoon of soy sauce and 1 tablespoon of oil, mix the rice with the egg and fry.
  5. Next, add the vegetables to the rice and carefully mix in.
  6. Then add the seared meat to the pan and mix in.
  7. Serve the fried rice in the pan or spread it on plates.
