Baked Potatoes with Sour Cream

The easiest recipe for potato chips at home. Potato tubers are baked in skins, and before serving they are cut, opened and supplemented with a piece of butter. Serve with sour cream and chives. If you wish, you can sprinkle crumbled fried bacon on the baked potatoes – it will be even tastier! It can be served as a side dish with meat, as an appetizer or as a hearty snack.

Ingredients

  • 4 small russet potato tubers
  • 2 tablespoon. l. extra-virgin olive oil
  • 1 teaspoon coarse or sea salt + optional to taste
  • 1 bunch of chives (approx. 30 g)
  • 0.5 tablespoon. sour cream
  • 60 gr. unsalted butter
  • 2 strips of bacon, fried and crumbled, to serve (optional)

Directions

  1. Preheat oven to 200 ° C.
  2. In a bowl, combine potatoes with olive oil, salt and black pepper to completely coat the tubers. Place on a baking sheet and bake until tender with a fork, about 45 minutes.
  3. Meanwhile, in a small saucepan, bring the water to a boil and season generously. Fill a medium bowl with ice water. Place the chives in boiling water and simmer until bright green, about 30 seconds. Immediately transfer the onion to ice cold water to set the color. Squeeze all the water off the chives and chop coarsely. Place in a blender with sour cream. Whisk until smooth, green sauce; season with salt and pepper to taste. Refrigerate until ready to serve. Or thinly chop the chives and stir in the sour cream; season with salt and pepper to taste.
  4. Slice the potatoes lengthwise and then crosswise. Move the sides to reveal the tuber. Divide the butter evenly over the tubers and serve with sour cream. Sprinkle with slices of fried bacon if desired.
