- 4 large potato (s)
- 500 g sour cream
- 100 g sprouts
- 100 g rocket
- 4 tomato (s)
- 75 g sunflower seeds
- some pesto (to taste)

- Wash the potatoes thoroughly, pierce holes all around with a fork, wrap in aluminum foil and bake for approx. 60 minutes at 170 ° C fan oven or 190 ° C top / bottom heat in the oven.
- Meanwhile wash the rocket, sprouts and tomatoes. Just before the end of the baking time, cut the tomatoes into small cubes.
- Remove the baked potatoes from the oven and from the aluminum foil, cut in half and brush each half with pesto. Arrange the potatoes with all the remaining ingredients on a plate.
